Am I the only one with a whole bunch of leftover ham from Easter? My father in law gave us a half of a ham to take home after Easter and even for our family of four its a lot of meat. Here is how I’m going to use up all that ham this week.
This is a no brainer, is there anything easier than a ham sandwich (or a ham cutter as we call them in Barbados). Don’t just try the same white bread and ham every time, try something a little different with these Hawaiian Ham Sandwiches. Of course you can get creative with the types of bread, toast or grill it to make paninis or forgo the bread all together and use tortillas to make roll ups.
2) Breakfast for dinner
Breakfast for dinner is a staple around this here. I love whipping up waffles on a weeknight why not try adding ham to omelets, frittatas, quiches or breakfast casseroles.
I also love making egg muffins for a low carb grab-and-go breakfast option.
3) Slow Cooker Ham and Beans
This is a really simple down home kinda meal. Its really filling especially served with cornbread
We also enjoy this recipe using Black Eyed Peas.
4) Ham Bone Soup
This is a tradition in Barbados, after using up the Christmas ham each year you have to make a soup from the leftover ham bone. Let me tell you, the flavor you get from a ham bone cannot be beat! I usually just add water to the ham bone, pieces of ham, maybe some other meat like chicken or turkey, onions, bellpeppers, peas (black eyed, split pea), potatoes, and of course dumplings. yum! 5) Chicken Cordon Bleu
This is another favorite in our house, between the tender chicken, the cheese, the ham and the oh so necessary white wine sauce this is one of my favorite things to eat. This is the recipe I use.
